This quick and easy homemade sauerkraut-style cabbage adds bright, tangy flavor to everything from Reuben sandwiches and corned beef to kraut dogs and more, and the best part is that it comes together in just a few minutes.
Shred 2 cups of green cabbage. In a small bowl, combine 2 tablespoons of your choice of vinegar, ½ teaspoon salt, ½ teaspoon sugar, and a pinch of caraway seeds.
Heat a medium skillet over medium heat and add the shredded cabbage. Pour the vinegar mixture over the cabbage and toss to coat. Cook for 3–5 minutes, just until the cabbage begins to soften. Remove from the heat and serve warm or allow it to cool and refrigerate for later use.
